Ingredients

Lorem ipsum dolor sit amet, consectetur adipiscing elit. The secret to great pad thai is high heat and a properly seasoned wok.

  • 6 oz dried flat rice noodles
  • 1/2 lb shrimp, 2 eggs, 1 cup bean sprouts
  • Tamarind paste, fish sauce, oyster sauce, palm sugar
  • Peanuts, lime, chili flakes

Instructions

  1. Soak noodles in warm water 20 minutes. Mix sauce ingredients.
  2. Stir-fry shrimp in smoking hot wok. Push to side.
  3. Add noodles and sauce. Toss 2-3 minutes.
  4. Scramble eggs into noodles.
  5. Add bean sprouts and green onions. 30 seconds only.
  6. Top with peanuts. Serve with lime.

Tips & Variations

Lorem ipsum dolor sit amet. The wok must be very hot — this is what creates the characteristic "wok breath" (wok hei) that makes restaurant pad thai taste different from home versions.

Vegetarian: Substitute tofu for shrimp. Replace fish sauce with soy sauce and extra tamarind.

Serving Suggestions

Lorem ipsum dolor sit amet, consectetur adipiscing elit. Serve with 4 traditional condiments on the side: sugar, fish sauce, chili flakes, and crushed peanuts. Thai iced tea is the perfect pairing.
