  • 1 lb fresh ramen noodles
  • 4 soft-boiled eggs
  • 1/2 lb pork belly for chashu
  • 2 tbsp soy sauce, 2 tbsp mirin
  • 4 green onions, 1 cup bamboo shoots, 4 sheets nori
  • 1 tbsp white miso paste, 1 tsp sesame oil

Instructions

  1. Blanch pork bones in boiling water for 10 minutes. Drain and rinse thoroughly.
  2. Return bones to pot with 4 quarts cold water. Simmer vigorously for 4 hours until broth turns milky white.
  3. Tie pork belly into a roll and braise in soy sauce and mirin for 90 minutes. Cool and slice thin.
  4. Strain broth. Season with miso paste, sesame oil, and salt to taste.
  5. Cook noodles per package directions. Drain well — do not rinse.
  6. Divide noodles into bowls. Ladle hot broth over. Top with chashu, egg, bamboo shoots, green onion, and nori.
